ABOUT THE ROLE

The heart of the Aurrum hospitality ethos is to ensure resident care and comfort through a high quality dining experience each and every day.

All cuisine served in Aurrum dining rooms is prepared from scratch in our state of the art kitchens using quality fresh produce sourced locally and in season.

Aurrum's passionate chefs prepare a variety of dishes each day using a range of healthy cooking techniques to ensure nutritious and delicious menu selections delivering a range of both new and traditional meals.

Reporting to the Executive Chef you will lead and mentor a dynamic catering team that is instrumental to Aurrum's food focused culture.  

As the Chef you will:

  • Oversee kitchen operations across breakfast, lunch and dinner services
  • Manage staff rostering, attendance, training, development and performance  
  • Manage quantity and quality control, stock control, minimisation of wastage and monitor quality of suppliers.
  • Oversee special catering events and offer instruction / demonstration of culinary techniques.
  • Undertake reporting and ensure the kitchen meets all safety and regulatory compliance standards
  • Ensure proper equipment operation/maintenance and ensure safety and sanitation in food preparation and service
  • Ensure staff maintain a high standard of personal hygiene and comply with the procedures in the Food Safety Program.
  • Ensure regular cleaning of all areas is maintained by catering employees within the kitchen as per schedule and Food Safety Program.
  • Champion and support the Living Life philosophy and culture of person-centered care

As the ideal candidate, you will have:

  • Minimum Certificate IV in Commercial Cookery qualification
  • Experience leading catering operations in large commercial or aged care settings
  • Strong written and verbal communication skills
  • Demonstrated organisational and time management skills
  • Valid National Police check (specific to work in aged care)
  • COVID-19 vaccination certificate
